Structure morphology of tea polysaccharide、alkali-soluble proteinand distribution of Selenium in tea from Ziyang

Abstract:
This study is to investigate the combined forms of selenium in tea from Ziyang county.The structure of tea polysaccharide and alkali-soluble protein are investigated by atomic force microscopy (AFM).The results showed that the ratio of selenium in tea polyphenol is 0.89% in total selenium comtent; the ratio of the selenium in tea protein and in tea polysaccharide is 60.12% and 18.06%,respectively. At the same time, Alkali-soluble protein seems to contain the highest amount of bound selenium, contributing to 23.81% of total selenium content. It is found that tea polysaccharide on mica shaped Multi-lateral branch-like structure by AFM, while the alkali-soluble protein existed in the form of size comparison uniform lever or spherical structure.
